Lime Pineapple Mold

Why eat plain ol' jello when you can mix in pineapple, cream cheese and optional nuts? Back in the day, you got cubes of jello for dessert at school. We were blessed with special molds and imaginative family members who took simple colored gelatin and turned it into a something beautiful and tasty.
  • 1 (3 oz.) package lime Jell-O
  • 2 cups water
  • 1 (3 oz.) package cream cheese
  • 1 small can crushed pineapple
  • 1/2 pint heavy cream
  • Optional: 1/2 cup chopped nuts
Make Jell-O according to package directions. Pour half into 9-inch mold and leave the rest in bowl. Refrigerate Jell-O in mold until firm. Drain pineapple. Mix softened cream cheese with pineapple. Whip heavy cream until stiff, then fold in reserved Jell-O, cream cheese and pineapple and nuts. Pour into mold.
