Stuffed Mushrooms

Here is my personal favorite appetizer. Go ahead and purchase a lot more mushrooms than what you think you will need. They will reduce in size as they bake and they taste so good they'll get gobbled up in no time flat! We no longer have the ability to purchase whole mushrooms individually at any of the local grocery stores. Now we have to purchase them in cartons and take what you get. I always liked picking the biggest, prettiest mushrooms because it made the prep time so much better. Enjoy!

INGREDIENTS
  • 1 lb. whole mushrooms with stems popped out and finely chopped and the insides cleaned out
  • 1/4 cup bread crumbs
  • 1/2 cup butter
  • 1/4 cup onion, finely chopped
  • 1 tbsp. Parmesan cheese
  • Mozzarella cheese
  • Optional: finely cut up 1-2 slices of sandwich ham

    DIRECTIONS

      Grease baking dish with butter.

      In a bowl mix butter, bread crumbs, onion, Parmesan cheese and chopped stems.

      Stuff into mushrooms.
      Sprinkle mozzarella cheese on top.
      Bake in 350 degree oven until mushrooms are cooked and cheese is slightly browned.
