Easy Pasta Salad

Wednesday nights are Momma nights around here. When my Daddy died, I thought it would be good for Momma to get out of the house and let someone cook for her. We all love pasta, but Momma's diabetes has made us learn to fix some of our favorites in a little healthier manner. A couple of years ago I heard about Dreamfields Pasta. You don't get the sugar spikes like you do from eating regular pasta. The taste is fabulous and it lets Momma keep eating what she likes.

INGREDIENTS:
  • 1 box of Dreamfields elbows or penne pasta 
  • Hellman's Mayonnaise
  • 1 orange or yellow pepper, chopped
  • 1 small can sliced black olives
  • 10-15 cherry tomatoes sliced in half
  • 1 small red onion, chopped
  • 1-2 small fresh squash, chopped
  • 1 cup grated Parmesan cheese
DIRECTIONS:
Cooked pasta in salted water per directions on the box. Let pasta cool. Do not rinse with water!

In a large bowl mix all vegetables, cheese and pasta with enough mayo so that it’s creamy. The pasta will absorb the mayo, so go a little heavy with it. Add in the cooled pasta. Season with salt and pepper to taste. Let it chill before eating.
Feel free to add in your favorite fresh herbs for a little variety. This is one dish that changes every time I fix it based on the veggies I have on hand. Another alternative is to add a mixture of Hellman's mayonnaise along with equal parts Buttermilk Ranch dressing.
