Heavenly Pecan Pie

There's a reason the word HEAVENLY is in the title of this recipe. One bite and you'll be glad you fixed two of these. Just don't get caught hiding one from everyone else! Granny brings these to work all the time and we all make sure we get dessert on the first trip through the line!
Filling:
  • 1 (8 oz.) pkg. cream cheese, room temperature
  • 1 ½ cups confectioners sugar
  • 1 (8 oz.) carton Cool Whip
Topping:
  • 1 stick butter
  • 2 cups chopped pecans
  • 1 cup coconut
  • 1 jar caramel ice cream topping
Cream together cream cheese, Cool Whip and confectioners sugar. Spread in two pie crusts of your choice.(You might as well go ahead and pick the most decadent...like a chocolate graham cracker crust for example!)
Melt butter. Add pecans and coconut. Spread on cookie sheet and toast as 450 degrees being very careful not to burn. Allow to cool and sprinkle on pies. Drizzle caramel topping over both pies. Refrigerate.
