I put this together one night when I was sick of eating tomato-based pasta dishes. The boys thought it turned out pretty good. You can have this whipped up and on the table in no time flat! Boil your pasta; stir fry onions, peppers and broccoli (leave a little crisp); make the sauce; and serve together with your choice of rough chopped peanuts or cashews on top. We prefer the cashews. It is different, but it an interesting way.
- 3 cups chicken broth
- 2 tbsp. peanut butter
- 2 tsp. sesame oil
- 2 tsp. soy sauce
- Dash or two of hot sauce
- Veggies of your choice--recommend onions, peppers and broccoli
Mix all ingredients in the skillet you cooked the veggies in until smooth. Serve over pasta.
