Au Gratin Potatoes

My Aunt Kay and I were having a discussion one day about a cabbage casserole my Grandmother used to make that had layers of onions and cabbage and cheese. That conversation turned into a discussion about au gratin potatoes. Well you know I had to fix some that week. Anyone could figure out the basic recipe was layered potatoes and onions, but I wanted to experience a few options on how to make the best homemade cheesy yumminess that makes these so good and tweak it to our taste. I went to www.allrecipes.com and searched for creamy au gratin potatoes and the first picture looked exactly like I pictured perfect au gratin potatoes would look. All I can say is CathyM hit it out of the park. Her recipe for Creamy Au Gratin Potatoes was perfect!

Low Carb Cheesecake

We are seven months into a healthier lifestyle. I found out this week that once you are used to eating healthy, when you eat out, your body lets you know. A family member was in the hospital and we ended up getting take out for supper several nights. In addition, I was picking up something quick on the way there for lunch. Two strikes a day and I was out! We remedied that with a big pot of white chili Thursday and steamed broccoli, cauliflower and carrots on the side of an oven-baked pork loin last night.

Fake Mashed Potatoes

In our healthy eating journey, we are always on the lookout for a little variety. The mashed cauliflower has been good, but I saw a recipe for "Mock Mashed Potatoes" on the Pickles & Honey blog in my Pinterest feed and had to give it a try. I varied a little to accommodate my pantry. Andy and I agreed that although it required more effort; the texture and taste of this was far better.

January 6, 2012 seems like just the other day!
MTSIG was the outcome of my desire to put my collection of recipes in an electronic format. It ended up being a way for me to share my joy of cooking with a huge audience and to show beginner cooks how easy it is to fix good food. Some of the earliest posts are pretty basic but I continually go back and add step-by-step pictures as I can. 

Andy and I love to try new recipes, so you also get my results on what everyone is seeing on social media. We also went through some lifestyle changes this past year so I included a "healthier" section full of recipes that were very successful for us. Plus, we are just plain ol' country folks who like to have fun, so the Redneck Food 'n Fun gets its share of visits. The homemade blackberry wine and deer summer sausage are a huge hit. The recently added Sundrop Punch and Whipped Cream Vodka Creamsicle beverages are two of my absolute favorites and have been shared so many times you all must agree!

Brussels Sprouts Gratin


We love, love, love brussels sprouts! Those "baby cabbages" baked in a cheesy, creamy sauce were a huge hit at Thanksgiving. Everyone, and I mean everyone ate them and liked them. The first time I fixed them, I followed this recipe floating on Pinterest loosely. It was good but a little dry. Again, no one complained and the whole dish was practically gone before I got a bite! The second time I added a little more cream. Be sure to experiment. We usually buy the 24 oz. bag of frozen brussel sprouts from Wal-Mart instead of the fresh. I am all about easy and these are just as good.

Have you made any resolutions for 2016? I have resolved to remove all the things out of my life that don't bring me joy and strive to embrace the things that do. Thankfully, that out with the unjoyful list is very, very short. We also plan on continuing our healthy eating. Just because the diabetes concern is gone, we will still be mindful of what we eat. Does this mean we won't add a few old favorites in from time to time? Absolutely not! Now that we have portion control under control, we are finding a lot of the "bad" isn't quite as bad.
