Cabbage Salad

Enough with the sweets already!! Between cheesecake, Meme's brownies, Kathy's chocolate candy, Pam's cupcakes and the Gigi's cupcakes Blair brought us, I'm thinking those few pounds I lost a couple of weeks ago have reappeared! It's time to start on some healthy foods. Bathing suit weather is just around the corner! Not that I'll be wearing the suit below...but we can all dream! 
INGREDIENTS
In a large container, layer the following:
  • 1 head cabbage, shredded
  • 1 large green pepper, sliced thin
  • 2 medium onions, sliced thin and separated
  • 1 medium jar pimientos, drained
Hot Dressing:
  • 1 cup vegetable oil
  • 1 cup sugar
  • 3/4 cup white vinegar
  • 1 1/2 tsp. salt
  • 1 spoon celery seed
DIRECTIONS
Boil for 2 minutes. Pour hot dressing over the vegetables, cover tightly and refrigerate at least four hours before serving. Keep this in the refrigerator!
