This is a simple side dish that just about everyone will like. You can use both squash and zucchini. If you have picky folks who don't like "green" just stick with the yellow. Once vidalia onions are available, that's what I'd use. It won't be long!
- 2 cups squash, sliced
- 1 onion, chopped
- 2 cups cornbread crumbs
- 1 stick butter, melted
- 1 can cream of mushroom or chicken soup
- 1 tsp. sugar
- 1 tsp. sage (or poultry seasoning)
- 1 egg
Boil squash and onion together. Drain well.
Mix all ingredients in a large bowl, pour into a casserole dish and bake at 350 degrees for 30 minutes.
