Healthy Mini Breakfast Casserole

There's nothing like chest pains leading into an angiogram and then to a quadruple bypass to make you tweak a recipe or two. As you remember, we went through a "pre-diabetes" scare with Andy several years ago. I compiled a recipe menu of healthier food options of the foods I prepared to help him get out of the woods and keep him from adding medicine to control his blood sugar.

We found out that being physically active and having decent cholesterol levels may not keep you from avoiding blood pressure or heart problems. Sometimes heredity plays a part. The key is listening to what your body is telling you. I am beyond grateful, thankful (and every other expression) that I'm sitting here typing what I am and not what could have been. Because Andy was proactive and asked to go to the emergency room; he headed off an impending heart attack. When we arrived, we didn't know what to expect. After an examination and a declaration to skip the stress test and go directly to an angiogram, we were both thinking worst case, maybe a stent and them we'll go home in the morning.

Nothing prepared us for, "we couldn't do anything. He will have to go further to get this fixed." At that point, they were thinking a triple bypass. The next morning it was upped to a quadruple and off he went to endure a six hour surgery under the skilled hands of Dr. Babu at St. Thomas West in Nashville.

My honey has a long road to full recovery, but he has no heart damage and his ticker should keep him around a long time. Dear followers, please take my advice. Do not ignore symptoms. If your body is telling you something is not right, LISTEN! It might save your life.

Andy loves breakfast better than any meal. Here is the mini breakfast casserole I threw together this weekend. The great thing about it? There were plenty left over that he has enjoyed popping in the microwave to enjoy with a simple fruit salad. I will make these again and change out the ingredients to what I have on hand. These included, ham, chopped onion, shredded cheese and those fake eggs in a carton. The only seasoning I used was pepper. Everything we eat has way too much sodium in it already.

I sauteed some chopped ham and onions until the onions were tender. I put a spoonful in each lightly sprayed cavity and topped with a little shredded cheese.

 I filled each cavity with a little "fake egg" mixture. I put the dish in a 400 degree preheated oven.

I let these bake for 18 minutes. (Adjust for your oven as needed)
