Hash Brown Casserole
Labor Day around here is also known as the Annual Dove Hunt. The guys go out and sit in the fields all afternoon until dusk and hunt dove. We typically smoke a couple of Boston butts on the pit the night before and serve up pulled pork with slaw, hash brown casserole, and cowboy beans.
This is a recipe Andy shared with me. I had never heard of it, but it was love at first bite. My co-worker Bob brought in his version using hash browns with peppers and onions a couple of months ago. Just when you thought something good couldn't get better...Yummy!!!
- 2 lbs. frozen shredded or cubed hash browns*
- 1/2 cup melted butter
- 1/2 tsp. pepper
- 1 tsp. salt
- 1/2 cup onions, chopped
- 1 pint sour cream
- 1 can cream of chicken soup
- 2 cups grated cheddar cheese
Mix all ingredients together as pictured.
Blend soup, sour cream and melted butter first.
Mix in chopped onions and potatoes second.
Add shredded cheese last.
Pour into casserole dish.
Bake at 350 degrees for 45 minutes or until bubbly.
* The hash browns with peppers and onions are a great alternative if you don't have picky eaters.
