Hot Cheddar Mushroom Dip

 My co-worker Meredith shared this totally delicious dip with me several years ago. We love her version, but decided we like the fresh mushrooms better. With the cold weather and all the football games going on this weekend,  this will be one of our favorite "go-to" appetizers.
  • 2 cups Hellmans mayonnaise
  • 2 cups (8 oz) shredded cheddar cheese
  • 2/3 cup grated Parmesan cheese
  • 4 cans (4.5 oz each) sliced mushrooms, drained
  •      (or 2 small containers of fresh, sliced mushrooms)
  • 1 envelope ranch salad dressing mix
In a large bowl, combine mayonnaise, cheeses, mushrooms and dressing mix. Spread into a greased 9 inch pie plate. Bake, uncovered, at 350 degrees for 20-25 minutes or until cheese is melted and fresh mushrooms are done. Serve with crackers.
