Cabbage Skillet
Remember me telling you about all those red and yellow peppers we bought on sale and sliced and vacuum sealed? Here's one of the recipes I'll be fixing with them. Cabbage Skillet is one of the prettiest dishes you can bring to a table. And easy?? The hardest part will be slicing the peppers, onion and smoked sausage.
INGREDIENTS:
In a large skillet, saute onion and peppers in butter leaving them slightly crisp.
INGREDIENTS:
- 1 large red onion, sliced into rings
- 2 large colored peppers, julienned (we prefer red and yellow or orange)
- 1 package of coleslaw mix (16 oz) (tri-color is my favorite)
- 2 tbsp. butter
- 1 lb. smoked sausage cut into 1" slices
- 1/2 cup chicken broth
- 1 tsp. minced garlic
- 1/2 tsp. pepper
- Salt to taste
In a large skillet, saute onion and peppers in butter leaving them slightly crisp.
Add smoked sausage and cook for 5-7 minutes. Stir frequently.
Add the rest of the ingredients and cook until it’s heated through. Please don't overcook! The slaw mixture and veggies shouldn't be totally mush!
