BLT Roll Ups
The first Tuesday of each month we have a celebration for the employees who have a birthday that month. Each month we have a different theme with April being "picnic foods". I found a recipe and have had it held back for this very occasion at What's for Dinner (off of Pinterest.) Andy wanted me to make a double batch, because he knew these would be good and didn't want all that goodness going out the door.

- 8 oz. cream cheese (softened)
- 1/2 cup Hellman's mayonnaise
- 1 cup chopped tomatoes (I used 2 Roma tomatoes)
- 1 pack bacon, crumbled
- Lettuce
- 4 8-inch flour tortillas
In a medium bowl mix cream cheese and mayonnaise
Stir in tomatoes
Andy had the brilliant idea to put the bacon in a zip bag and mash until it all crumbled. This was so easy and made the job not messy. I knew I kept him around for a reason!
Blend bacon with other ingredients. Shred lettuce.
Spread a layer of cream cheese mixture on top of one of four flour tortilla shells.
Top with lettuce and roll. Leave the last half inch clear as the filling will squeeze out a little as you roll.

Place in refrigerator for an hour minimum for cream cheese to set.
Slice roll about every 1/2 inch. Keep refrigerated until ready to serve.
