Refried Bean Quesadillas
Don't be thinking I'm going all vegetarian on you when see what we had for supper tonight! When I'm long on things to do, short on time but want to eat something really good...refried bean quesadillas are one of my favorite go-to dishes.
Back when the boys had a bunch of activities in high school, this was something they enjoyed eating and I loved fixing...quickly and inexpensively. My first choice is to use refried black beans, but the plain are just as good.
INGREDIENTS:
- 5 flour tortillas
- 1 can refried beans
- 4 oz. chopped green chilies
- 1/2 pack taco seasoning mix
- Shredded cheese
- Salsa
- Chopped onion (optional)
Warm refried beans in microwave (1 minute, 30 seconds-1000 watt oven)
Add taco seasoning, chilies and chopped onions.
Mix all ingredients until well-blended.
Butter one side of a flour tortilla. (Or spray skillet with cooking spray)
Turn tortilla over. Spread bean mixture on 1/2 of tortilla. Place a few spoonfuls of salsa on top of beans.
Top with shredded cheese.
Pre-heat skillet to medium heat. Carefully move tortilla to skillet.
Fold tortilla over the top of the beans.
Cook until the tortilla starts to turn a nice golden brown. Cut in half. Serve with sour cream, additional salsa or guacamole.
Quick, easy, cheap and filling! Sounds like the perfect weeknight meal! :)
