Tennessee Caviar

An alternative to Texas Caviar, my Tennessee version makes use of the fresh cherry tomatoes and onions we have in abundance in the summer. I also substitute the bottle of Zesty Italian dressing with a package of Ranch dressing mix. This dish can be used as a dip with corn chips or as a side. The longer you let it marinade before digging in, the better the flavor!
I brought a batch out to Blair and Kevin's last night for everyone to enjoy before we dug into ribs, chicken, Andy's potatoes and onions, campfire beans, pasta salad and banana pudding. They did a fabulous job cooking and grilling. Unfortunately, we had to duck out before the massive fireworks show because of a very early wake up.

  • 2 cans of black-eyed peas
    1 can white shoe-peg corn
  • Drain all above ingredients
  • Add:
  • 1 can Rotel (mild or hot)
    Cherry tomatoes
    1 sweet onion, chopped fine
    1 package of Ranch Dressing
  • 1
Mix all ingredients and chill for several hours.
  • Will keep in the refrigerator for a week.
