Egg Roll in a Bowl

Now that the most dismal Christmas Day we have ever experienced has passed, it's time to talk about healthier eating for the new year. Or is it? We did not overeat due to the fact that it was just Andy and myself. We had prime rib and boiled shrimp on the menu. All are now sealed and frozen for a later celebration. 
 
COVID-19 is wrecking life as we know it. My sister flew in from Alaska for a two week visit. I was looking forward to taking some time off and visiting with her. A few days after her arrival, my niece's boss let her know he tested positive for coronavirus; later that day so did my niece. What are the odds? Andy and I made a late evening trunk delivery of extras they needed while they are quarantined. Dawn waved from the porch. I literally cried when we got to the end of the driveway. I thought that was the only visit I would get while she was here.
 
Within days, several of our kids were also diagnosed so we called off our family Christmas. Stuffy noses, a little congestion with loss of sense of taste and smell are the symptoms they're suffering with. And these are people who masked up and were careful!!!
 
Then, Christmas day, a bomb exploded in Nashville. Seriously? Are flying monkeys next? The bomb knocked out communications for AT&T customers. So...instead of getting to talk to my sister on Christmas Day and again prior to her flight on Saturday to wish her safe travels, I get a message telling me the call cannot go through. We cannot connect on any level...texting, Messenger...nothing. Our time was very limited but I am grateful for the outdoors with masks brief visit we had on Wednesday. I could ramble on for days about this, but I will stop.

STOP THE PRESSES!! There is a knock on my door as I was typing this and who is standing there? My sister! The last message they were able to receive Friday night was all flights were cancelled until 3PM Sunday. She didn't realize we still had internet and phone access since everything they had was knocked out. I told her flights were back on with no delays and her flight was in the air. I got up early enough to try to call again and check the app to see her flight was still on schedule. I was sick she missed her flight. After numerous busy signals, she was finally able to get through to Alaska Airlines and reschedule her flight for Sunday.
 
We ended up getting to spend the day together after all! 💓💓😊😷 Mom received a surprise visit from the both of us. We masked up even though the two tests taken came back negative but she was waiting on results from the third (which was confirmed as negative when she arrived in Seattle). I fixed a pot of homemade chicken noodle soup and a skillet of Mexican cornbread, we chatted a while, watched a little tv and enjoyed a Fireball and Coke toddy (or two) before bedtime. At 2:45 AM I made sure her alarm went off and she headed to the airport with no means of communicating if she ran into any problems. Please baby Jesus, let the rest of her trip be uneventful!
 
Happy, sad, happy, sad, happy, sad. If you are like me, this 2020 roller coaster ride is taking a toll. I'll hush and move on to what you came here for. Blair gave us this recipe and we have fixed it several times. It's super easy and very tasty. If you close your eyes, you'll think you're eating an egg roll. I drizzled the bowl with some Captain Rodney's Boucan Glaze (which I use in Captain Rodney's Cheese Bake everyone loves) to give it a little kick. Sweet and sour sauce would work also. You can serve with riced cauliflower or real rice depending on how carb-conscious you are.
 
INGREDIENTS:
1 lb. sausage
1 bag of cole slaw mix (green and purple cabbage and carrots)
2 tablespoons soy sauce
1 tablespoon ginger
1 teaspoon garlic powder
1/2 cup green onions
1 tablespoon red pepper flakes (optional, but why not?)
Prepared white rice or riced cauliflower

  Brown and finely chop sausage in a deep skillet.

 

 Mix the spices into the browned sausage.

Mix the veggies in with the sausage and blend well.

I like the veggies to be a little crisp so I just blend well and cover for just a few minutes and serve.

 Prepare rice to mix in with egg roll ingredients.

Optional toppings include green onions, sweet and sour or soy sauce.
