Mashed Potatoes and Cabbage
I found this mashed potatoes and cabbage recipe in a Facebook post from Small Town Woman's blog a couple weekends ago. I messaged it to Andy after I read the ingredients. We love Grandma's au gratin potatoes and cabbage, fried cabbage and fancy mashed potatoes so I knew we would like the flavor profile. It's been officially added to my list of special occasion potato recipes. The official name for this recipe is "Irish Colcannon" for those who want the facts. I'm filing this under Mashed Potatoes and Cabbage so we can remember how to find it. We like keeping it simple around our household.
The name mashed potatoes and cabbage may sound simple, but that doesn't describe the flavor. They are simply delicious. As a bonus, they taste good when reheated as a left over side dish. We served this with barbecued pork chops. That's all we needed with a dish this hearty. It's easy to prepare but you will have to do some chopping. Just put on some good music and put it together!
INGREDIENTS:
4 large russet potatoes, peeled and cut into 1" cubes
1 medium sweet onion, chopped into small pieces
1/2 small head cabbage, chopped
6 slices bacon, cooked and chopped
Butter
1/2 cup heavy cream
Salt and pepper to taste
Once you remove the bacon, add the chopped onions to the skillet.
