Chicken Alfredo Lasagna
What in the world inspired me to make my version of Chicken Alfredo lasagna? Possibly the marathon of cooking shows Andy and I watched one hot, humid weekend? One segment featured a good old fashioned red sauce lasagna but I was feeling a white, creamy Alfredo dish of goodness. Chicken in the freezer? Check. Ingredients to make the sauce. Check. Quick run for sliced mushrooms, peppers and spinach and this was on the menu.
The easiest way to make this is to:
- Cook the meats
- Make the sauce
- Boil the lasagna noodles while you prep your veggies
- Layer all the ingredients
MEAT & CHEESE INGREDIENTS & DIRECTIONS:
1 package of boneless, skinless chicken (thighs or breasts) stewed and chopped
1/2 package of bacon cooked and chopped into large pieces.
While the chicken is cooling, make the sauce. My go-to Alfredo Sauce is the one I use when I make Creamy Shrimp Pasta.
In addition to the cheeses for the Alfredo sauce, sliced Provolone and Mozzarella cheeses were in the layers.
ALFREDO SAUCE INGREDIENTS & DIRECTIONS:
1 stick butter
1 tbsp. flour
32 oz. heavy cream
1/2 cup Mozzarella
6 oz. grated Parmesan-Romano cheese (not the powdery kind)
Make your cream sauce in a medium sauce pan. Melt a stick of butter on medium heat. Once it's bubbly, whisk in the flour. Slowly mix in the cream, continually stirring. Once it's blended really well, add in the cheeses. Stir, stir, stir! Set off the heat and begin prepping your veggies.
VEGETABLE LAYER & DIRECTIONS:
Chop the following:
1 large onion
Pint mushrooms
Mini sweet peppers (1-2 cups)
1 small bag spinach
Saute the onions and peppers in olive oil. Add the mushrooms once the onions start to wilt.
Pile on the chopped spinach in batches. Add more as it cooks down.
Veggies are cooked and now it's time to start layering!
- Sauce to cover the dish
- Lasagna noodles
- Chicken and bacon
- Veggies
- Alfredo sauce
- Mozzarella and Provolone slices
- Top with noodles and begin again
When the top layer is complete, add a little extra Alfredo sauce to ease down the sides and top with more cheese.
