Baked Sweet Onion Appetizer

What Super Bowl is complete without an appetizer or two?

This is the easiest one to fix once you chop the onions. It ranks up there with the Captain Rodney Cheese Bake. If you don't add the optional Boucan Glaze for sweetness, you most likely have the ingredients on hand. Just pick up your favorite chips, bread or crackers to go with. Frito Scoops made a perfect pairing...salty and sweet! The smell of sweet onions baking will make your mouth watering in no time.

INGREDIENTS:

2 sweet onions, chopped

1 cup mayo

1 cup shredded white cheese (Monterrey Jack, mozzarella or Swiss)

Cracked black pepper and salt to taste

Optional : 1-2 tablespoons Captain Rodney's Boucan Glaze

Blend all ingredients in a medium bowl.

Spread ingredients in a casserole dish.

Bake in a preheated 350° oven for 45 minutes or until mixture is bubbly and cheese is melted.
