BLT Pasta Salad

Who doesn't love a BLT sandwich? When homegrown tomatoes are available, I can't wait to fix one for breakfast, lunch or dinner. This is an easy pasta salad to prepare so go ahead and bookmark it. I was bringing this to my sister's house and they prefer turkey bacon so I used that instead of regular bacon. It still tasted good, but I'm all about some crispy bacon and that would be my preference. This makes a pretty healthy sized bowl of pasta salad.

INGREDIENTS:

1 lb. spiral macaroni, cooked and cooled
1 small pack of cherry tomatoes or two large tomatoes, diced
1 lb. bacon of your choice, cooked and chopped
1.5 cups mayonnaise
.5 cup sour cream
1 bundle of green onions, chopped (green only)
1 head of Romaine lettuce, chopped (2-3 cups)
1 small block of cheese cut into small cubes
Ranch dressing pack
1 tbsp. Italian seasoning
Salt and pepper 
In a large bowl add mayo, sour cream, ranch and Italian seasoning.
Add the chopped bacon.

Slice the cherry tomatoes into quarters.

Add the cherry tomatoes to the bowl.

With a sharp knife, chop the ends of the green onions and save the lower portion for another use. 

Chop the remaining part of the green onions.

Add the green onions to the mixture.

Give everything a good stir. Coat all the veggies and bacon well.

Make sure your pasta is completely cooled before adding to the bowl.
Stir, stir, stir! Everything should be well blended and coated with the dressing.
Chop the lettuce and remove any extra moisture with a paper towel.

Add the lettuce to the party, and stir some more!

Blend the cubed cheese along with some salt and pepper to taste.
Chill for a few hours before serving.
