Summer Squash Casserole
I am trying something new. No background or rambling...just the recipe. (Find me on TikTok @manthatstuffisgood)
5 yellow squash sliced
1 large sweet onion, chopped into big pieces
1 stick butter
2 tsp. salt
2 tsp. black pepper
2 large eggs, beaten
8 oz. sour cream
1 cup sharp Cheddar cheese, shredded
1/2 cup Swiss cheese, shredded
1/2 cup mayonnaise
2 tsp. thyme
2 packs Ritz crackers crushed
1/4 cup Parmesan cheese, shredded
DIRECTIONS:
Preheat oven to 375°.
Cook squash and onions in a stick of butter on medium heat, covered until tender.
In a bowl mix sour cream, eggs, mayo, cheeses and spices.
Remove cooked squash and onion with a slotted spoon to keep liquid to a minimum.
Carefully blend into mixture and add to a lightly greased casserole dish.
Top with crushed crackers.
Bake for 20 minutes lightly covered with foil. Remove foil and bake until crackers are a light brown, approximately another 10 minutes.
